Ancho Chile Club Sandwich Recipe

A classic Club Sanga with Spring Gully’s ‘Ancho Chile Green Tomato’ Relish.

An easy, quick to make sandwich, full of well matched flavours and contrasting textures. The Ancho Chile Green Tomato Relish adds a punch of tangy flavour to sauce, along with a hug of heat. It’s versatile, and is easily integrated into your next sandwich!

Ingredients:

General:

  • 4 slices sourdough bread, or thick crusty bread slices
  • 3 tbs salted butter
  • 5 slices halloumi, sliced thin
  • 1 tbs honey
  • 1 tsp chilli flakes
  • 6 leaf stems leafy lettuce
  • 1 tomato, sliced evenly
  • 4 short cut or middle bacon slices
  • 1 large avocado, sliced thin

Sauce:

  • 2 tsp Spring Gully’s Ancho chille green tomato relish
  • 2 tbs mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp lemon juice

Chicken Marinade:

  • 1 large chicken breast, butterflied and halved
  • Sprinkle flakey salt
  • Freshly cracked pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • Drizzle extra virgin olive oil
  • Squeeze lemon juice

Method:

STEP 1:

First prepare the simple but elevatedsauce by whisking together mayo, Spring Gully’s Ancho chille green relish, garlic powder, onion powder and a squeeze of lemon juice. Set aside in fridge to chill and merge flavours.

STEP 2:

Prepare your chicken by butterflying the chicken breast and slicing in half to form two portions. In a large bowl, combine all marinade ingredients thoroughly and set aside to infuse.

STEP 3:

Begin cooking your bacon + halloumi with honey and chilli flakes in seperate pans. Flip once and cook both until nicely browned and crispy on both sides. STEP 4:

Slice up tomatoes and prepare lettuce for building sandwiches. Season the tomatoes lightly with salt and pepper.

STEP 5:

Then begin cooking up the chicken in a hot pan with olive oil. Sear each piece for 2-3 minutes on each side until golden brown and cooked through.

STEP 6:

Finally, pan toast the bread in some butter and olive oil and begin to prepare the sandwich for assembly.

STEP 7:

Finally, assemble sandiwch. Slice in half and enjoy straight away.
