Elote Corn Salsa Recipe
Using Spring Gully’s all NEW Elote Corn Relish this Elote Corn Salsa is a crowd favourite at any social event! This recipe is simple, delicious and takes less than 8 minutes to prep. The chargrilled, smoky flavours that come through from the relish will leave your mouth watering.
- 3 tbsp Spring Gully Elote Corn Relish
- 1 large tomato, diced
- 1 red onion, diced
- Handful of sliced jalapenos
- 300g drained corn kernels
- 420g drained Mexican style bean mix
- 1/4 cup coriander leaves
- 1 lime
In a large bowl, add diced tomato, onion, jalapenos, drained corn kernels and Mexican style bean mix. Add 3 generous tablespoons of Spring Gully Elote Corn Relish and juice from half a lime. Mix all together.
Once well combined continue to add more Spring Gully Elote Corn Relish if you want a stronger Elote flavour. Garnish with coriander and lime wedge. Serve with corn chips and enjoy!
