Fig Mustard & Goats Cheese Tartlets

  • 2 Teaspoons Olive oil
  • 3 Red onions, sliced thinly
  • Salt and pepper, to taste
  • 2 Teaspoons Spring Gully Fig Mustard
  • 2 Teaspoons Thickened Cream
  • 2 Sheets Puff Pastry
  • 150g Goats Cheese, sliced
  1. Pre-heat the oven to 200°C
  2. Heat a frying pan over a low-moderate heat, and add the olive oil and the red onions, season to taste
  3. Cook slowly for 15-20 minutes, until soft and caramelised
  4. Once cooked, allow to cool
  5. Mix the Spring Gully Fig Mustard and cream together in a small bowl
  6. Take each sheet of Puff pastry, and divide each into 9 equal sized squares
  7. Using a knife, trace out a smaller square, in each one, without cutting all the way through, to form a 1cm border
  8. Using a fork, prick the base each of the inside squares
  9. Place the 18 squares of Puff Pastry onto 2 baking trays
  10. Spread the Fig Mustard and cream mixture over each of the pricked bases, top with a spoonful of the caramelised red onion and a slice of the goats cheese
  11. Place into the oven to cook for 12-15 minutes, or until golden and puffed

Serve warm
